American Cookery is notable not only because of its attempt to define a national cuisine, but also for claiming that women actively engage on many levels, thanks to their work and their expertise, in building the nation. The second edition, lacking the first seventeen pages of commentary that made the first edition so remarkable, was more frequently reprinted and plagiarized over the next few decades, relieving the text of some of its political potential.
